Marinade the backstrap in buttermilk, lots of garlic powder, and hot sauce. Marinde over night. Grill to medium rare. Let sit. Make a sauce with butter, red wine, finely chopped parsely, hot sauce, and some cajun seasoning. Slick backstrap into madallions than put sauce on. Pretty good stuff.
