this is killer but you have to have a nice size backstrap to do this. My wife used one from the 140 # doe i got.
take the tenderloin and slice it around the loin until it becomes flat. take a mixture of salt,pepper, mrs dash, garlic and rub it onto the meat. next take any type of stuffing and place it in a line at the end of the roll. roll the loin over and add another "layer" of stuffing. roll the loin up and place it in a roasting pan with the "seam " side down. add potatoes, carrots, onions, and add at least 3 cups of a beef gravy to it. cover with tin foil and cook at 375 degrees for about 45 minutes. after cooking let the meat rest , for at least 10 minutes. after 10 minutes pull the loin and place it on a cutting board and slice it. serve with salad and beverage of choice this is going to be dinner today, my mouth is watering . here is a pic. definitely worth trying guys.
