Feathers?

do you skin your ducks, or pluck em? If you de feather, how do you do it?

I'm a skinner though I have had some geese plucked by the rubber fingered spinning machines. Still need to get the pin feathers and scorch with brown paper.

I pluck all of mine. I like to have the skin on for the first bit of cooking so it doesn't dry out as much. As for how, just start pulling! The pins are not a problem but the down can be a pain. Geese are dipped in boiling water for a short period to loosen the feathers.

I skin them. Its quicker.
