Depending on the number of people you want to have hunting? You can attract doves to an acre, of course 5 acres is more attractive.

Plant sunflowers NOW to be ready for opener. Provide plenty of bare ground by disking next to field prior to mowing in mid August or use chemical treatment to eliminate weeds.

Css, can you mix buckwheat with or near the sunflower plot? I've heard that doves really like buckwheat as well?

Buckwheat matures quickly and doesn't last very long. Deer tend to hit it as well. Buckwheat is great if you get a late start on your plot.
Beware deer will learn to destroy the sunflowers also. Depending on densities you may want to anticipate deer damage and plant larger plots. I've seen deer destroy 5 acres of sunflowers. It usually takes a couple of years for them to start feeding on them.
